Missions
-
Develop a forecast list of products necessary for the achievements;
-
Carry out inventories;
-
Store foodstuffs according to the methods prescribed in the establishment;
-
Receive and verify quantitatively and qualitatively product deliveries;
-
Determine material needs, schedule and plan tasks based on production;
-
Possibly develop new technical sheets, carry out preliminary preparations, make all the basic stocks, mother sauces, etc.;
-
Prepare recipes from technical sheets, prepare dishes according to the menu, specific orders, etc.;
-
Check the preparations (tasting, analysis and rectification)
-
Create menus, cook dishes, take care of the decoration and presentation of plates and check the preparations;
-
Manage food orders and supplies;
-
Clean and use kitchen equipment and appliances, monitor food preservation and quality of ingredients;
-
Supervise and organize the work of staff (dishwasher, kitchen assistant, kitchen assistant).
Profile
Training and operational skills:
-
CAP cuisine
-
Have at least 2 years of experience in the kitchen and have already worked in one or more hotels;
Other qualities:
-
Have manual control during preparation, competence in professional cooking techniques;
-
Have talent and creativity;
-
Have great management and organizational skills;
-
Be precise and careful in the work;
Have good resistance to fatigue and stress.
