1. CONTEXT
Pastry occupies an important place in the kitchen. Given the interculturality of the
staff, sweet pastries can reinforce the feeling of well-being for some,reduce stress for others. The Kitchen Manager must diversify the desserts to take intoaccount the requests for dessert. The Kitchen Manager has requested training inPastry in order to master the specific techniques of the work related to the preparation, making, cooking and decoration of a wide variety of pastry products.This ToR is established in order to define the themes to be addressed in order to be more precise on thetraining need requested. Each service provider may request and submit the file before the date of 02/09/2024 at 4:00 p.m., by email to the addresses yao.ast.log@premiere-urgence-cmr.org with a copy to char.rh@premiere-urgence-cmr.org and log.co@premiere-urgence-cmr.org , or in physical file in the offices of PREMIERE URGENCE INTERNATIONALE located in the Bastos district behind the Diplomate hotel.
2. TRAINING OBJECTIVES
General Objective:
To upgrade the Kitchen Manager on the methods of creating different
desserts.
Specific Objectives:
Prepare dry and soft cakes;
ToR training in pastry 2 /2
Assemble cream cakes and various decorations;
Be able to make the sponge cake.
Assemble the creams
Make the doughs: shortcrust, puff, shortbread, etc.;
Be able to make sweet and savory miniardises.
3. EXPECTED RESULTS
OS1: Prepare dry and soft cakes
RESULT OS1: be able to make dry and soft cakes
OS2: Assemble cream cakes and various decorations
RESULT OS2: be able to assemble a complete cream cake.
OS3: Be able to make the sponge cake.
RESULT OS3: know how to make a sponge cake dough
OS4: Whip creams
RESULT OS4: know how to make different types of cream (butter,
pastry, etc.)
OS5: Make pastries: shortcrust, puff, shortbread, etc.
RESULT OS5: know how to make different types of dough
