Responsibilities

ROLES AND MISSIONS

We are looking for one of our clients in Cameroon, a Sushi Chef M/F who will be in charge of preparing a wide range of raw fish and other ingredients, managing food inventory and work with attention to detail to fulfill all orders to quality standards. To be successful in this position, you will need to have experience in Japanese cuisine. You will have as:

 

 MAIN TASKS   

· Create a rich sushi menu, with different ingredients and raw fish (salmon, tuna, unagi).

· Prepare all types of sushi, maki, nigiri and sashimi

· Choose fresh fruits and vegetables to prepare quality dishes (avocado, mango, carrot)

· Add additional flavors to maki: ginger, rice vinegar, wasabi and soy sauce for example.

· Manage culinary preparations, such as cooking rice

· Coordinate with our service staff to ensure proper cooking, and accommodate guest food requests and allergies

· Prepare entrees, soups and salads in the spirit of Japanese cuisine

· Monitor stock levels and place orders as needed

· Recommend new modern recipes, such as sushi burgers.

· Respect the principles of hygiene in all areas of the kitchen and clean your area at the end of the service.

Educational Requirements

A diploma from a professional school would be a plus.

Experience Requirements

At least 1 year of experience.

Additional Requirements

SPECIFIC REQUIREMENTS

 · Professional experience as a sushi chef or in a specialty sushi restaurant.

· Good knowledge of different types of sushi and preparation techniques.

 

 

· Ability to work quickly and accurately.

· Team spirit.

· Ability to work during business hours, including weekends and evenings.

· Flexibility to ensure different shifts.
